Sweet & Hot Wings and Drumlets

Sweet & Hot Wings and Drumlets combine the crunch of deep-fried or baked chicken with a bold, two-tone flavor profile. The dish uses both wings (the flat, two-boned middle section) and drumlets (the meatier, single-bone section that resembles a mini drumstick).

The cooking process involves coating the chicken in a light starch or flour crust, then cooking it until the skin turns crispy and golden. Once cooked, the meat is tossed in a rich reduction sauce. This glaze typically blends Asian-style sweet chili sauce, sriracha or hot pepper flakes, soy sauce, garlic, and a touch of honey or brown sugar to caramelize the exterior. The result is a finger-licking appetizer or main course that delivers an initial hit of sweetness followed by a lingering, warm spice.
